Johannes Zillinger believes wholeheartedly in the philosophy of biodynamic farming, even growing his own herbs for tea tinctures to use as treatments in his vineyards. For the Velus Weiss, each of the grapes are separately fermented and aged in stainless steel for nine months on lees with batonnage.
