Val de Mer is Patrick Piuze’s second winery, co-owned with Moutard-Diligent. The winemaking is similar to his namesake line: grapes are hand-harvested, spontaneously fermented, and the élèvage is the same. This crémant is sourced from 25 year old vines planted on limestone and clay soils in the town of Tonnerre.
