Besson’s village-level cuveé comes from hand-harvested, 35-year-old bush vine Gamay from a few plots of granite filled soil. The grapes undergo whole-cluster fermentation in concrete before gentle pressing off the skins and six months of aging in concrete before bottling with minimal amounts of sulfur.
