François-Xavier Dauré is a 4th generation winemaker from the village of Espira de L’Agly, just 20km from the Mediterranean Sea. The Mourvèdre and Grenache are macerated separately, both largely whole-cluster, before the components are blended after the completion of malolactic fermentation. The wine remains on the fine lees for 5 months until bottling.
