Since 1985, Conservas de Cambados has operated their own cannery in Galicia where the Pontevedra river meets the Ría de Arousa estuary. With practices that set the artisanal standard, and mindfulness for long-term sustainability, Conservas de Cambados honors the traditions of both kitchen and sea.
Freshly harvested mussels are lightly fried in olive oil and covered with a vinegar and paprika marinade that adds a little zing to their flavor. Serve as a tapa with toast or crackers.
In Galicia, mussels are suspended from giant rafts in the cool, nutrient rich water of the Rias – tidal rivers famous for their bountiful seafood. Only the finest mussels are selected to be prepared by Conservas de Cambados, and each tin is packed by hand.
